Soooooo yummy.

Second time to make this...it's that good. Still yet to get pork fillet that looks like this. I think it's better with flat pork steaks anyways. Also used convection this time instead of professional baking...don't know what the substitute is exactly on this new oven at our apartment vs one at corporate apartment.


Fillet of pork in puff pastry

1 roll of puff pastry
1 pork fillet, approx. 450 g
150 g bacon, sliced
2 tbsp oil
Salt
Pepper
Stuffing
1 bunch of flat leaf parsley
2 thyme sprigs
2 rosemary sprigs
100 g dried tomatoes in oil

1 Sear the pork fillet in a frying pan with the oil, season it with
salt and pepper, then remove the fillet and leave it to cool.
2 Pull the parsley and thyme leaves off the stalks, strip the rosemary leaves and chop all the herbs up. Slice the dried
tomatoes into strips.
3 Lay the bacon out on the work surface, overlapping the slices,
until you get a rectangular shape in which you can wrap
the fillet. Spread the herbs and tomatoes over the bacon and
press down. Place the fillet on top and wrap it in the bacon.
Place the fillet on the puff pastry, fold the shorter edges
over the fillet (around 3 cm), then roll it up lengthways. Brush
the edge of the pastry with water and press it down to
seal.
4 Cover the stainless steel tray with baking parchment and
lay the fillet on to it, with the pastry seam facing down. Decorate with any remaining pastry.
5 Put the stainless steel tray into the cold cooking space at
level 2. Professional baking 200 °C, 30 minutes.

Plate and put a little salad on the side....and maybe a glass of wine.

BEEF: IT'S WHAT'S FOR DINNER


















Beef stroganoff

800 g shoulder of beef, in strips 1 cm thick (try asking for this at a Swiss German grocery store)
Salt
Pepper
1 tsp beef bouillon powder
2 yellow peppers
2 red peppers
2 green peppers
2 onions, finely diced

Sauce
3–4 tbsp gravy powder
2 tbsp tomato puree
180 g thickened cream for making sauces (still no idea if I'm getting the right thing...full cream?)
Paprika powder

1 Season the meat with salt and pepper.
2 Cut the peppers in half, remove the stalks, seeds and white
membranes, then cut into strips.
3 Put the meat in the porcelain dish and scatter the beef
bouillon powder, peppers and onions over the top.
4 Put the porcelain dish on to the wire shelf at level 2 of the cold
cooking space. Steam 100 °C, 40 minutes.
5 Pour out and collect the juices from the porcelain dish, stir
the gravy powder, tomato puree, the thickened cream and
paprika into the juices, then add this sauce to the meat.
6 Put the porcelain dish on to the wire shelf into the warm
cooking space at level 2. Regenerate 140 °C, 6–8 minutes.
Season to taste before serving.
Tip
Serve with polenta.

Bread Pudding, Pasta Gratin and Birthdays

The zoo was a hit! Taking the train was definitely the right decision and when we were walking back home later in the afternoon Steve and I definitely gave each other a high five for surviving the day. The girls had their moments but we all had a great time and Maddie definitely enjoyed her birthday celebration. I wish I had recorded the playing lions since it was Maddie's favorite. This is the best I could do. And Maddie with her Zum Geburtstag cake (which translates to 'for birthdays'). Happy Birthday Maddie!

We had pasta gratin, salad and cake for Maddie's birthday Sunday. It was super yummy so I thought I'd post the recipe. Steve mentioned that there was a loaf of "hard" bread in the fridge so I decided to make bread pudding yesterday. I adapted two recipes and I must say that I was very impressed with myself (c; It is soooooooooo good. And it was delicious this morning with coffee (c;



Pasta gratin

300–350 g uncooked pasta (shells or elbow macaro
ni)
2 onions, cut into rings
250 g mushrooms, sliced
100 g bratwurst, sliced and slightly cooked
1 bunch of flat leaf parsley, leaves pulled off from stalks and chopped

Sauce
4½dl vegetable bouillon
2½dl single cream
Salt
Pepper
150 g grated cheese

Put the pasta, onions, mushrooms, air-dried ham and parsley into the greased porcelain dish and mix together.
For the sauce, stir the vegetable bouillon and single cream together and season. Pour the sauce over the pasta.
Sprinkle with cheese.
Put the porcelain dish on to the wire shelf at level 2 of the cold cooking space. Hot air with steaming 180 °C, 35 minutes.





Banana Bread and Butter Pudding

4 dl milch
4 dl halbrahm (half cream)
as much sugar as you want (c; (maybe close to 1 cup)
50 g butter
1 becher haselnuss joghurt (1 cup hazelnut yogurt)
4 eggs

A little water
1 loaf of grain bread (cut into chunks...however you like)
2 bananas (sliced)

Grease a baking dish with butter.

Layer the bread chunks and bananas in the baking dish.
Pour the milk and cream into a saucepan. Bring to the boil, take off the heat and allow to cool. Add remaining butter to cream mixture to melt.
In a bowl whisk the eggs, water and sugar, then add the cream mixture into the eggs, stirring continuously. Add the yogurt.
Carefully pour the custard over the bread and bananas. Leave to stand for 20 minutes pushing down on the bread occasionally. The idea is for the bread to soak up the custard.
Put the porcelain dish on to the wire shelf at level 2 of the preheated cooking space. Hot air humid 180 °C, 15 minutes.
Check to be sure that it is not overcooking. Continue with Hot air humid 180 °C, 15 minutes.
Do not allow the custard to overcook otherwise it will scramble.

Fish for dinner...definitely will do this recipe again.

Fish in puff pastry

Stainless steel tray
1 roll of puff pastry
1 red pepper
1 courgette
Coriander or flat leaf parsley
Salt
Pepper
4 small portions of firm fish,
around 50 g each

1 Cut the pepper in half, remove the stalk, seeds and white
membranes, then cut into strips lengthways. Cut the stalk off
the top of the courgette, then cut it into slices lengthways.
2 Cut the puff pastry into four equal-sized rectangles.
3 Lay the pepper and courgette diagonally across the pastry
pieces, sprinkle with the plucked coriander or parsley,
season with salt and pepper, then place the fish on top. Pull
the two free corners of the pastry over the fish.
4 Cover the stainless steel tray with baking parchment and put
the puff pastry parcels on it.
5 Put the stainless steel tray into the cold cooking space at
level 2. Professional baking 210 °C, 25 minutes.

LIFE = CHANGE

Yes, it's true. We have moved to Zug, Switzerland. This is the place we will call home for the next 2-3 years. Steve's company offered him the opportunity to work out of their international office here and we took it. So we're slowly adjusting to life here.

We're just about over the jet lag, although we might mess ourselves up again tonight trying to stay up and watch the Super Bowl. We have had our first family trip to the grocery store, IKEA and although we've tried to eat at the Migros Take Away we have yet to adjust to the business hours here. Everything closes earlier and nothing is open on Sunday.

I'm hoping I can manage to get my first load of laundry and a load in the dishwasher done tomorrow. I need to make a second trip to the grocery to get the correct product. Apparently the water is very hard here so you have to add a "conditioner" so there isn't soap scum/residue left everywhere. Anyways, everything is just a little different but we're handling it pretty well.

Steve starts work tomorrow and hopefully Maddie will start school on Wednesday. Her birthday is Sunday so we'll have to find a way to celebrate on Saturday (since everything is closed on Sunday). The girls are adjusting well and are enjoying the trips back and forth between our "two apartments." Our air shipment should arrive on Tuesday at our apartment and we're currently staying at the corporate apartment. Our sea shipment will arrive a few weeks later and then we can fully move into our apartment (soooooo ready). Felix will arrive shortly after that. We miss him and his vacuum cleaner abilities (C:.

oh the joys july will bring...

we started out the month celebrating our country's freedom with friends and family at the lake house. and then topped it off with our new little girl, sophia allyson josti. we had our 37 week appointment on july 1 and didn't make it to the 38 week appointment july 8. here's the brief rundown of sophia's entrance into the world...

tuesday morning july 6
wake up and take maddie to get her cast off...then immediately go to the lake house for a morning of swimming to reward maddie for her patience through her month of wearing a cast

tuesday night after watching wipeout and laughing uncontrollably and then deadliest catch and crying we went to bed only to get up 5 minutes later because i started having contractions, severe lower back pain and cramping. we called our friends stacey and kc to come out and received instructions to head to the hospital from our dr after an hour of no relief. i started getting chills but no fever and sophie was moving around alot. so kc stayed with maddie and stacey drove us (carefully and quickly) to the hospital.

we arrived at the hospital at 1:30 am. at that point i was running 101.5 fever and sophie's heartrate was hovering around 200. 160 is the high end of normal. i was immediately hooked up to an IV to receive fluids and put on oxygen. but we could only get sophie's heartrate down to 185 and that was only for a short moment. next step was to confirm that i didn't have an infection so after the pleasantries of getting a catheter and having my water broken it was determined that we needed an emergency csection. i was very happy at that point (still having severe back pain and contractions) to receive a spinal and our little sweetie was born at 3 am. needless to say a little different than maddie's delivery (arrived at 6:30 am for induction - born at 11:39 pm) sophie's delivery (arrived at 1:30 am - born at 3 am).

she was having trouble breathing normally and due to risk of infection she was taken to the special care unit shortly after being born but not before we both were able to see her. oh and she didn't quite beat her sister in size but she came close...10 lbs 2 oz and 21 inches long. she spent wednesday and thursday until noon in the special care unit receiving oxygen and antibiotics. thankfully she was able to come to the room with us thursday afternoon and we received a good report on her blood count so she was able to get the IV out after 48 hours. her breathing has regulated and it seems that everything is fine as far as infection in both of us.

we decided she was ready to come into the world and was just obeying the wishes of her sister (and many others) who said "baby sophie come out" tuesday night before going to bed. maddie got to meet her little sister on friday morning and is ready for all of us to come home.

thank you to kc and tj for their help on tuesday/ wednesday watching maddie and felix until steve's parents arrived. and thank you to steve's parents for keeping maddie and felix at the lake while we've been recovering in the hospital. thanks also to stacey who was a great support during maddie's delivery and sophie's delivery. we are also thankful for the staff here at the hospital who have been amazing through this entire experience. thanks to everyone for the prayers that have carried us through to where we are and continue to bring blessings of joy. we look forward to going home tomorrow to enter into this new season as a family.

memorial day, june, and broken legs

we had an awesome memorial day weekend this year the josti lakehouse. steve got a few good skis in, maddie enjoyed a few boat rides and we enjoyed relaxing on the patio. steve and i drove down to new hampshire with john and michelle for mari and glenn's wedding which was beautiful. it was at the glen manor house in portsmouth, ri which was right on the bay. due to the wildfires in canada there was a haze over the bay but it was still beautiful. it was great to see the ito family and see some of the old "sudbury" crew. here are some pics from the weekend...

the following weekend we flew to texas to spend a little over a week at my parent's new lakehouse in streetman, tx on richland chambers lake. we arrived at 10 pm, drove to the lakehouse (got there about 11 pm), chatted with our extended fam that was there already, went to sleep, woke up and welcomed the rest of the extended family on my dad's side, did some swimming, had a fish fry and at about 2:30 p maddie broke her leg. we spent the majority of the afternoon/ evening in the emergency room in corsicana, tx. they put a splint on her leg, gave us some pain meds to help her and gave us a referral for children's hospital in dallas. we went to walmart and my mom bought maddie a red wagon which we used the remainder of the week to wheel her to and from the boat dock, up and down the driveway, up and down the street...basically wherever her little heart desired. we went on wednesday to children's where they casted her. we have since been re-casted twice (long leg cast for 10 days after we got back from texas, currently in short leg cast until july 6). she's walking now and when she gets this cast off, she'll be done. obviously not what we were expecting from our trip to texas but when you have a toddler, you roll with the punches. we had a great vacation and visit with my family. we were able to see some of my college friends who trekked to the boonies to see us (jamie and her fiance tony and his daughter carly - kristen, dalton and little blake - emily and abbott). it was great visiting with all of them. my mom's side of the family came the following weekend so we enjoyed spending time with them as well. and as you can/ will see from the pictures...there was no shortage of relaxing.

still waiting on sophia to arrive. at 35.5 weeks she was measuring at 8.1 pounds (give or take a pound). yes...that's a large baby. she'll gain about 1/2 pound a week which puts us right around what maddie weighed when she was born. let's hope she comes sooner...

life

so here's a snapshot of our life over the last 3 months...

we had a major set of rainstorms that made our backyard into a mini-pond where the ducks felt free to swim for a good portion of an afternoon.

i've been (or i should say my belly has been) growing like a weed as our little girl...sophia allyson...is now 3 weeks ahead of her gestational age in size. looks like we're in for another big baby.

maddie is expanding her resume to include flower girl. she was in carlos (high school friend of steve's) and nathalie's wedding this past weekend in new hampshire. she's a pro.

the josti lakehouse is reaching completion with a few extra outside steps and walkway and some painting left on the to-d0 list. we are spending all of memorial day weekend there with the exception of monday when steve and i will drive down to newport, ri to see our friends mari and glenn get married.

the propes lakehouse is complete and as is true with every house...some landscaping still left to be done. we are leaving next friday to spend 10 days relaxing lakeside. needless to say, i'll be waited on hand and foot (right, steve?) since i'll be nearing 8 months pregnant.

maddie now has a swingset in our backyard. she loves it. we had some issues getting it completed as there were missing parts but it's done now and we're enjoying it.

we enjoyed a visit from the hernandez family and were lucky enough to spend easter with karin and little e. we are looking forward to having them back in new england!

i finally got the garden (veggies and flowers) planted - with maddie and steve's help (C:. steve has informed me that aside from a few things left on the patio to plant, we are not buying anything else to plant. our garden is gorgeous and we are looking forward to harvesting a wide variety of tomatoes, lettuce, onions, butternut squash, cucumbers, zucchini, summer squash and a small arrangement of herbs.

we're whittling our way through our to-do list before sophie arrives in mid-late july. and enjoying the calm before the storm of having two children. i got a little taste of what it will be like when maddie and i went to visit our friends mike and courtney who just had a little girl...leah grace. she is adorable and maddie was in love with her. she's ready to be a big sister.

we celebrated my birthday with the josti family a little early this year because our friends, the hernandez family, are coming to visit from the dominican next week. here is the traditional pic of me with the birthday cake...and maddie waiting for hers. oh and a pic of the cutest aprons that katy (my sis) made for maddie and me.

maddie and i planted our seeds for our garden today to start indoors so they'll be ready when it's time to plant them outside. of course i waited too long to do this activity outside and it was rainy and cold today...it's been mid to upper 50s the last few days and sunny. oh well...we made do with our plastic cover and the kitchen floor (C: maddie was such a good helper. she just needed a "few" instructions.

we're going to have another baby girl! she's due july 21st. maddie is now pointing to my belly and saying sissy (can't quite say sister). she's going to be a great help and a great big sister. here are some ultrasound pics from 18 weeks. i'm 21 weeks now.

maddie's 2nd birthday

after a long day of flights and delays getting out of dallas, the whole family made it to boston to celebrate maddie's birthday (kara at 2 pm, katy and colin at 11:30 pm, and mom and dad at 4:30 am...yes that's right a.m.). we enjoyed a lazy friday except when working hard at making the awesome cake that was consumed on saturday at the party. we all went out to the josti lake house late afternoon for dinner and walking on the frozen pond. we had a great time and katy and colin started a few snow fights. saturday morning maddie and granddaddy made waffles for breakfast and we finished getting ready for the party (katy had stayed up all night finishing the cake decorations...she is amazing). the party was a blast and maddie thoroughly enjoyed her "mini-cake". she peeled the fondant off her cake like she peels her clementines and thought she was supposed to put it in the trash. she tried some and even shared some with mommy. but the cake was entirely hers...of course we didn't let her eat all of it. sunday was spent relaxing until we had to say our goodbyes and drive to the airport (never fun). all in all...a great time celebrating maddie's 2nd birthday.

caribbean vacation

we spent the last 10 days of october in the dominican republic visiting our friends, karin, eric and little eric.  for the first 5 days we were in juan dolio at the beach, staying in an apartment and for the last 5 days we were in santo domingo staying at karin and eric's apartment.  we were so blessed by our time there and enjoyed seeing our very good friends.

four years

steve and i celebrated our four year anniversary last month.  we left maddie and felix with grandma and grandpa and spent the night at the park plaza in boston.  we went to dinner and movie and had a great time...just the two of us.  sorry...no pictures.

early fall

here are some updated pics from this fall.  maddie is really enjoying her learning tower that grancy and granddaddy got her.  she helps me make banana bread, pizzas, muffins, cookies and lots of other tasty treats.  she also just enjoys playing with flour (C:

maddie is learning how to do all kinds of things on her own now...eating yogurt is a messy one.

we went to a josti family beer fest where everyone brought different beers to taste and every food item had beer as a cooking ingredient...lots of fun.  maddie enjoyed walter and linda's sandbox....aka steve's next project for maddie (C:

we went with church again this year to cider hill farm in amesbury, ma.  maddie really enjoyed the animals and eating the apples.  she also enjoyed picking out her pumpkin and the cider donuts.

we went down to ashland day this year.  most of the activities are better for older kids (bouncy houses, bungee run, obstacle course, etc.) and there are lots of craft booths that were shutting down just as we got there...we hit the tail end.  but we did make it to the petting zoo and maddie loved it.  they had chickens, goats, rabbits and a duck.  they also had a llama and a donkey in a separate pen.  definitely a must for next year...

maddie and i did mommy and me gymnastics this year.  it was fun to watch maddie explore new things and see what she "went for" each week based on what she enjoyed last week.  i think her favorite was running up and down the long trampoline and swinging on the rope.

the josti lake house is almost at completion.  we are helping them move most of their stuff in this weekend.  i will post pics of that soon.

maddie and i went with kc, stacey and her parents to edaville in carver, ma.  we rode the train around to see the cranberry bogs (most of which had already been harvested because of the frost the night before - we were able to watch them harvest one of the bogs).  maddie loved the train and the kids area in the museum.

summer 2009

i have been very delinquent in updating our blog this summer.  fall is already upon us here in the northeast proved by the leaves starting to change in new hampshire (where we spent last weekend) and a few here and there in massachusetts as well as the colder weather settling in (although we had barely had a summer heat to speak of).  so in my effort to appease the masses and provide updated pictures of maddie (the only reason most of you read our blog), here is a collection that i feel best shows how we spent our summer 2009.

we started our summer with a vacation (1 week for steve, 2 for maddie and myself) to texas to visit family and old friends.  we spent most of the time steve was there at my aunt and uncle's lake house on lake lbj.  maddie and i made a short trip to arkansas to see some college friends.  the rest of our vacation was spent watching maddie take her first steps and visiting with family.


i have started helping a friend with registration for 2 youth events in new england.  the theme for the summer camp (crosswalk) this year was 'set sail'.  so before camp started the staff went on a sailing trip out of gloucester (that's glostah for you southerners).  we left maddie with grandma and grandpa.  not really a place for toddlers.

we spend most of our weekends at the lake house helping with the new house doing construction on retaining walls, building cabinets, and anything else that we're kindly asked to do (C:  steve has thoroughly enjoyed the slalom course that some fellow "lakers" set up this year.  we've also enjoyed spending time with grandma and grandpa and playing lots of pitch (card game).

i played on a softball team this summer with some friends from church.  we joined up with trisha (goes to our church) and her co-workers to form 'the biohazards'.  we almost won one game but are determined to come back next year with some experience under our belt and win at least one game (C:  steve is playing ultimate frisbee now with the same group.  the games are a little later than our softball games so we'll see how many games maddie and i make it to.  but we were there for the first and it was cold.

steve and i were able to make it to one red sox game (steve's been to a few more solo with co-workers...i'm not bitter (C:) thanks to john winning 4 tickets.  we had great seats and even though there was an "enemy" (aka a yankees fan) among us, it was a good time.  

we've also enjoyed our little blowup pool in the backyard as well as a trip to a friend's house with a pool and trampoline (it was the neighbor's).  we've had a few friends over to enjoy it as well.  hopefully next summer will provide more warm days.

we also enjoyed a short visit from my parents in august just before my dad had to return to school.  we served up a nice new england meal (lobstah, baked potato, corn on the cob) and did some work around the house.  we took a trip up to the josti lake house so they could see the progress and steal ideas for their texas lake house (to be built in the coming year).  maddie is going to have 2 lake houses....spoiled rotten (C:

another momentous occasion happened this summer in new england.  we have been waiting for this moment for a long time.  it was the one thing missing here and now we have it.  peabody (that's pea-beh-dee) welcomed it's first (and new england's first) sonic drive-in.  of course we went for the grand opening where you had to wait in line (in your car) just to get into the parking lot.  we cut through the parking lot next door and waited in line to order on the patio.  it was great.  now they need to open one in framingham.
maddie and i recently took a week trip to go out to arizona to visit our friend, ellie.  it was hot but we survived and enjoyed the spectacular views, the pool at ellie's apartment, the phoenix zoo and playing with bebo (aka beebs - ellie's rabbit).  we'll have to make the trip again when it's not so stinkin' hot.

this past weekend we went with some friends to a lake house in new hampshire.  we played cornhole which is essentially two boards at an angle a specified distance apart that each have a hole in them and you are trying to get a 'beanbag' (but with corn) to land on the board or in the hole...very fun and addicting.  had a campfire, watched a movie, played many board and card games, some went paddleboating and even swimming (maddie included).  we had a great time.

and now we're staying home for a few weeks before we go to the dominican republic to visit karin and eric and little eric.  and this is the view we have to look forward to.
